Here's another super easy, super delicious dinner. Enjoy!
Mediterranean Chicken Packets
Recipe from Everyday Food
4 boneless, skinless chicken breasts
Salt and pepper
1 can (14.5 oz) diced tomatoes, drained
4 artichoke hearts, quartered
12 Kalamata olives, halved and pitted
4 tsp capers
1/2 cup crumbled feta
1/2 tsp Italian seasoning
1 TBSP olive oil
Preheat oven to 375. Place four 12" squares of parchment paper or heavy duty foil on a work surface. Place a chicken breast on one half of each square, leaving a 2" border; season with salt and pepper.
Dividing evenly, top chicken with tomatoes through feta. Sprinkle with Italian seasoning and oil. Fold parchment over ingredients and crimp edges to seal. Place packets on a rimmed baking sheet. Bake until chicken is opaque throughout, about 20-22 minutes.

I've never cooked in parchment paper, but I see them do it all the time on foodnetwork. This looks very good.
Yummnm...nice blend of flavors and how convenient and tidy to cook in a packet to capture and meld all the wonderful flavors.
