MSCC: Flourless Chocolate Cupcakes

Okay, so here goes another super short post. My best friend and her two kids are staying here this week and we have been having too much fun for me to write much!

This month's MSCC cupcake was flourless chocolate cupcakes. It is kind of like a sunken in brownie cupcake and it was great with a nice big scoop of homemade peanut butter ice cream.

MSCC: Strawberry Cupcakes


Yay! MSCC (Martha Stewart Cupcake Club) is making a reappearance on my blog! I stepped down from the group shortly after my move. Even though it was only 1 cupcake a month, I just couldn't keep up with all my other baking commitments. Lucky for me, Sugar Betty opened up the group to let us bake along when we could. I was one happy camper when I heard!

Strawberry cupcakes were a good cupcake to jump in on. I loved the fresh strawberries in the cupcake and the frosting was delicious. A nice big berry on top and you have a great treat!

MSCC: Pumpkin Patch Cupcakes


I'm slowly but surely getting things back in order around here. Even though everything is unpacked, things are so crazy and I have yet to find much time to get in the kitchen. Hence why I am posting this so late in day!


I love anything pumpkin! One of my favorite things about fall is the plethora of pumpkin recipes floating around. I tend to go on pumpkin overload during October and November. I get excited to try new pumpkin recipes and pumpkin cupcakes seemed to be the place to start.


The flavor of the cupcake reminded me of a soft pumpkin cookie. Full of delicious pumpkin flavor and just the right amount of spice. Incredibly good! The book suggests using a cream cheese frosting to top these, but I had leftover Cinnamon-Nutella dip in the fridge and was running out of hours in the day, so that beat out making frosting. Believe it or not, I thought the cinnamon topping was fantastic.

Martha Stewart Cupcake Club: Zucchini Spice Cupcakes

This is a perfect recipe to post today because it is my birthday! Happy 27th birthday to me! We will be celebrating in Disneyland with the kids today and then off to Sea World tomorrow. I am so excited!

This month's Martha Stewart Cupcake Club recipe is Zucchini Spice Cupcakes. I have said many times before how much I love baked goods with either carrots or zucchini, so I was thrilled to make these.

They were super easy to make and smelled great while baking. I made half with nuts and half without. I think both were amazing! The cupcake itself was pretty much zucchini bread in cupcake form and very delicious plain. But then I added the cream cheese frosting and I was in heaven! These cupcakes are AWESOME!!!

Martha Stewart Cupcake Club: Chocolate Salted Caramel Cupcakes

I mentioned on my blogiversary that I joined another baking group and I am thrilled that today is the post date for the inaugural month of the Martha Stewart Cupcake Club. The group was started by none other than the cupcake queen herself... Betty of Eat My Cupcake.

The first recipe chosen was Chocolate Salted Caramel Cupcakes. I can't say that I was super thrilled about the choice. Something you may not know about me is that caramel is my arch nemesis in the kitchen. I LOVE caramel. Any way you make it, I want it. But, I always have a problem making it. It never quite turns out the way it is meant to. I don't know what I am doing wrong, but I seriously suck at making caramel!


This time I thought would be different. I stayed by the caramels side just waiting for it to reach the right temperature. It was getting close, so I walked away to get the cream. Man, those last 10 degrees went fast, because in the time it took me to grab the cream, the caramel was hotter than it needed to be. It still tasted wonderful and was great, but once I filled the cupcakes with it, it kind of turned into a Rolo like candy. That's not a bad thing, but I was hoping for runnier caramel.

Overall, it was a great cupcake, though. The cake itself was delicious, the frosting was yummy, and the salt added a whole different dimension. We really enjoyed these cupcakes!
