TWD: Rum Drenched Vanilla Cakes

Check out those vanilla bean flecks... YUM!


I loved this recipe! I usually omit the alcohol from baked goods since I don't drink, but for whatever reason I decided to go ahead and buy a bottle of rum for this cake. I figured there was only 1/4 cup of rum in the recipe and it makes two loaves so the rum flavor wouldn't really be overwhelming.

To be honest, I didn't really taste the rum in the cake. The cake also had 2 vanilla beans in it, so the vanilla flavor was the most prominent. This pound cake was absolutely delicious!

I glazed one of the cakes with the rum glaze and the other I glazed with a simple syrup flavored with vanilla extract. Nathan said he could taste the rum in the glazed cake but that it didn't overpower the cake. I loved the plain glazed cake and really think it is a perfect pound cake!

Guest Blogger: Sour Cream Pound Cake

I made this for my Grandpa for his 76th birthday and he loved it! I hope everyone will make it and enjoy it as well. I put strawberries on top and a little bit of vanilla ice cream and it made the cake more enjoyable! Alone or with something else makes this cake. Enjoy!!


Sour Cream Pound Cake

Recipe:

1 cup of butter
3 cups of sugar
6 eggs
1 tsp. Vanilla extract
1/4 tsp. Baking soda
3 cups flour
1 cup sour cream

Instructions:

Cream butter and sugar together in an electric mixer preferably. Add 6 egg yolks and save the whites for later! Then you will need to add 1 tsp. Of vanilla and the baking soda. Then you will need to add the 3 cups of flour and 1 cup of sour cream alternately.

In a seperate mixing bowl beat the egg whites that were set aside until stiff. After they are stiff fold the whites into the batter. Grease a tube pan with pam then pour the batter into the tube pan and bake at 325 F for an hour or until golden.

SMS: Lemon Walnut Sour Cream Pound Cake


I am back with Sweet Melissa Sundays today and boy is it a great recipe to come back with. The recipe choice was Lemon Walnut Sour Cream Pound Cake and it is delicious! Plus it smells AMAZING!

The cake itself has just the right amount of lemon and is so moist. I love the walnut chunks throughout the cake and the crunch they provide. I am not used to nuts in my pound cakes but I was pleasantly surprised. The cake is finished off with a lemon and sugar glaze that adds just a little more lemon. I really enjoyed this cake!

SMS: Perfect Pound Cake


Just in case anyone was worried, I am alive. Busy but alive. We are enjoying being stateside, but it is so weird knowing that we are staying and that we aren't flying back to Germany in a couple weeks. There is so much to get used to and we aren't even in Texas yet. I know everything will fall into place, but it is all VERY weird!

We are leaving for California in the morning and will be there for 4 days. I am really excited about our trip but I am pretty sure Anya is even more excited. She wanted to make a construction paper chain to hang up counting down the days until we go to Disneyland. It should be a great trip!

Now let's get to the good stuff... SMS! This week's recipe choice was Perfect Pound Cake. I accidentally grabbed the 1/3 cup instead of the 1/4 cup, so I added a little extra flour than the cake called for. I think it made my cake a tad drier than it would've been, but it was still great. I took Melissa Murphy's suggestion and grilled the pound cake and topped it with grilled pineapple, vanilla ice cream, and, instead of butterscotch sauce, I topped it all with Nutella. :) Yum!!!!
