SMS: Sweet Potato Cake with Cinnamon Rum Glaze


I was on the fence with this recipe. I don't eat sweet potatoes all that often, but Nathan loves them and asked if I could make this cake.

I made the cake as written, glaze and all. Usually I would omit the rum from the cake since I don't drink, but I was making this for Nathan and I thought he would enjoy the cake, glaze and all.

The cake itself was delicious. It was the glaze I had a problem with. The rum flavor was way to strong for me and I ended up just eating the inside of the cake. Nathan, on the other hand, really liked the cake. Considering he was the one I was making it for, I would call that a success.

Im glad your man loves this cake! It looks good. I would not like the rum either, that is why I left it out!

I'm glad he enjoyed it! Sorry about the glaze, I opted for a cinnamon confectioner's sugar icing instead. I'm with you - not a rum person. :)

Looks beautiful. I didn't use the rum because I do think it overpowers the flavor. I used extra orange juice and a little vanilla.

Wow, it looks great! I was going to make this one (really!) but they didn't have canned sweet potatoes at Trader Joe's.

Glad your hubs enjoyed this one! I thought it tasted a lot like pumpkin. If you ever make it again, you could definitely skip the glaze - I thought the cake was plenty moist without it!

Your cake looks fantastic, glad Nathan liked it. It's funny, I think my rum cooked down, I couldn't really taste it.
