I love coconut. I know it is one of those things that people either love or hate... there really isn't an in between for people when it comes to coconut. But for me, I love it. I will eat it pretty much any way you give it to me.
I was excited to try this Coconut Custard Pie. Yes, I made minis again, but there is just no way that we were going to eat an entire pie. The custard is a basic custard flavored with cinnamon and nutmeg. One thing to note is that the custard is made in the food processor... no stovetop necessary. :)
The coconut is actually placed on the bottom of the pie crust and the custard is poured on top. After baking, you are left with a silky, creamy custard pie. So delicious!
Thanks to Ruby of I Dream Of Baking for hosting this week. The recipe can be found at her blog.

Looks fantastic! I love coconut and can't wait to make this later today.
Looks great! The mini is a great idea. I need to get my hands on some mini pie tins. Thinking of making this later today in ramekins and will try a couple of flavors. I'm one of those people on the fence about coconut. I like the flavor, but don't love the texture. I will still give the coconut a try.
Looks great! I made mine and never tasted it as I brought it to a friend's party and the cupcakes were eaten, but not the pie!
Minis are the best! I made one mini and loved every bite of it!
Cristine, I'm actually one of those in between people. I love it on it's own or with other fruit but I don't like it when it's mixed with say chocolate or anything else.
Minis rock!

Thank you for baking the pie with me! It really is a yummy recipe- mini pies are just as adorable as anything else mini =D
How neat that the custard is made in the food processor! It looks fantastic (and minis are so much easier to deal with).
I love mini's, so cute!!
i love coconut too! this looks delicious!
Great job on your pie! We loved it too. And fabulous job on your croquembouche! I love the sugar corkscrews!
I love coconut too, though I used to be a hater :) Love your mini! I almost went that route too but my mom offered to take the pie to work so I made the whole recipe after all. Glad you enjoyed this one!
The minis are always a great idea. Where did you get the tins? I'd love to have some. Coconut is a good thing in my book as well. The pie looks great!
