Carrot Cake Pancakes with Maple Cream Cheese Frosting


Happy Easter and Happy Pancake Morning! We enjoyed delicious carrot cake pancakes this morning and they were a hit! I hope you all have a fantastic Easter with your families!

 Carrot Cake Pancakes with Maple Cream Cheese Frosting

3 cups flour
5 tablespoons sugar
1 1/2 teaspoons salt
4 teaspoons baking powder
1 tsp cinnamon
Dash nutmeg
Dash cloves
2 eggs
2 2/3 cups buttermilk
6 tablespoons oil
2 tsp vanilla
1 cup shredded carrots

Frosting:
8 oz cream cheese
3 TBSP pure maple syrup
Dash cinnamon

For pancakes, mix dry ingredients in a bowl; set aside. Whisk together wet ingredients in another bowl. Mix wet into dry.

Cook pancakes on griddle until done.

For frosting, beat ingredients until smooth. Spread on pancakes and serve.

Oh my gosh those look and sound so YUM!!!!!! I may have to have a pancake dinner soon since we never have time for it in the morning!
