TWD: Carrot Spice Muffins

I love baking with vegetables, especially carrots! These muffins are filled with carrots, raisins, coconut, and yummy spices. We loved them and will definitely make them again!

Thanks to Nancy of The Dogs Eat the Crumbs for hosting this week. The recipe can be found at her blog.

I love your shot of the inside of the muffins! I baked with my silicone molds and they turned out good. I over filled them so there shape is not perfect! I crumbled one up and put it in my oatmeal, oh my...like having dessert for breakfast!
I can't wait for the cool fall weather. I will be sure to make these again and again!!
