Nutella Bread Pudding

We had company over for dinner last night and I made this for dessert. Of course, we were so excited for dessert that I competely forgot to take a picture of it. It was so yummy, though, that I had to still share the recipe.

I drizzled the bread pudding with extra Nutella straight out of the oven and served it warm with vanilla bean ice cream! Mmmmm mmmm mmmm!

Nutella Bread Pudding
Recipe slightly adapted from Inspired Taste

7-8 croissants
Nutella
4 eggs
2 cup cream
2 teaspoon vanilla extract
1/2 teaspoon salt
1 cup sugar

Preheat the oven to 350 degrees F.
 
Slice each croissant in half lengthwise then slather one side with Nutella. Put the halves back together to make sandwiches and cut into 2-inch pieces.
 
Add sandwich pieces to greased 8x8 pan.
 
Whisk eggs, cream, vanilla extract, salt and sugar to a medium bowl until combined.
 
Pour the custard over the sandwich pieces then gently push down the bread so the custard starts to absorb. At this point you can bake right away or let sit in the fridge for a few hours to soak up more of the custard.
 
Cover with aluminum foil and bake in a 350 degree oven for 30 minutes then remove the foil and continue to bake uncovered for about 10 minutes until the bread pudding is golden brown, has risen slightly and the liquid has been completely absorbed.

Sugar Cookie Dip

I've seen variations of this dip floating around Pinterest and decided to create my own today. I wanted it to taste similar to my sugar cookies and I have to say it was pretty fantastic! Next time I will add some pretzels to serve it with... I think the sweet/salty combination would be great!

Sugar Cookie Dip

1 box dry sugar cookie mix
1 (8oz) package cream cheese
1 container Cool Whip
1 tsp almond extract
Splash of milk for thinning

Mix cream cheese and sugar cookie mix in mixer thouroughly. Add cool whip and whip to combine. Mix in almond extract and milk until desired consistency is reached. Refrigerate until ready to serve.

Lemon Cheesecake Ball

This may not look like much but you have to make it right away!!!!! I served this at a brunch yesterday and it was a hit. It tastes just like lemon cheesecake! I served it with granny smith apples, graham crackers, gingersnaps, and nilla wafers. I will definitely be making it again! Mmmmmm!

Lemon Cheesecake Ball
Recipe from Annie Eats

10 oz. cream cheese
2½ tbsp. sugar
Zest of 1 large lemon
4 tsp. freshly squeezed lemon juice
3 graham crackers


Combine the cream cheese and sugar in a medium bowl. Stir together with a spoon or spatula until well combined and smooth. Mix in the lemon zest and lemon juice until smooth. Transfer the mixture to a piece of plastic wrap and shape into a ball, wrapped tightly. Refrigerate until firm, at least 3 hours. Reshape if necessary once firm.

Coarsely crush the graham crackers and transfer the crumbs to a plate or bowl. Roll the cheese ball in the crumbs until evenly coated. Refrigerate until ready to serve.

Pumpkin Spice Pretzel Bites

Last week I bought a bag of the Pumpkin Spice Kisses with the intention of making cookies for a friend. Of course I completely forgot my house was being packed up so I had no cookie sheets to bake with and nothing to measure with, either! Bummer, because the two cookie recipes I have for these are AMAZING (see HERE and HERE).

Now, you could totally eat these kisses plain (I do!) but I wanted to do something with them. I love the sweet and salty combination so I made these little pretzel sandwiches. Needless to say, they didn't last long. SO YUMMY!

Just spread out some pretzels on a baking sheet or foil. Top with a kiss. Place in 350 degree oven for 2-4 minutes or until soft. Remove from oven and place another pretzel on top. Let cool and enjoy!

4 years of blogging & Petit Fours (30 by 30)

4 years and 855 posts... Happy Blogiversary to me!




A lot has happened in 4 years. When I started this blog I was living in Germany with a newborn and a 3 year old and my husband was deployed. I am now in El Paso with a 7 year old and a 4 year old and we are getting ready to move once again (to HAWAII!!!!!). My posting has changed over the years, too. When I first started blogging I would post daily. Then we moved to El Paso and the blog took a back burner for a while... only a few posts a month. This back and forth has continued and I am back to posting not so often. I am definitely still cooking and baking but after 855 posts I am not always making new foods.

I have had so much fun with this blog. It has been a great outlet for me and I have "met" some fabulous people. I love having a place where I have all my recipes and I've even turned it into a book (well... 2 books so far!). I don't plan on stopping any time soon... we'll see where this blog takes me! Who knows when a daily posting will come back or if it will just be a post here and there. Either way I will be baking and cooking and enjoying life!

Thanks to my readers who have been here from the beginning and thank you to the new readers who are still discovering my blog. I appreciate you stopping by and love hearing from you!


And to celebrate my blogiversary I made some cute Petit Fours! They are from my 30 by 30 list and are so yummy! I won't post a recipe but there are hundreds out there. Pretty basic stuff, though. Take cake (regular or pound cake), cut it into squares, layer with jam, and top with ganache or poured fondant. Easy peasy and delicious!

30 by 30: Bananas Foster


This was a super fun dessert to make... mostly because I got to start a fire! :) Start to finish this takes less than 10 minutes and is SO delicious! Lighting the rum on fire was pretty fun, too!


Bananas Foster
Recipe adapted from Food Network

  • 2 tablespoons unsalted butter
  • 1/4 cup dark brown sugar
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon freshly ground nutmeg
  • 2 under ripe bananas, sliced in half lengthwise
  • 1/4 cup dark rum

  • Melt butter in a 10-inch heavy skillet over low heat. Add brown sugar, allspice and nutmeg and stir until sugar dissolves. Bring sauce to simmer. Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish.

    Bring sauce to a simmer and carefully add the rum. If the sauce is very hot, the alcohol will flame on its own. If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes. If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency. Immediately spoon the sauce over bananas and serve. Serve with waffles, crepes, or ice cream.

    30 by 30: Cake Pops


    I finally got around to making cake pops! I made some patriotic pops for the 4th of July and they were a hit! I have made cake balls a hundred times before but finally put them on a stick! :) I won't be including a recipe because it really is just cake and frosting dipped in chocolate and there are so many tutorials out there that are better than what I could tell you! :) The picture is just proof that I knocked out a 30 by 30 recipe!

    30 by 30: Chocolate Souffle


    My souffle rose beautifully but as you can see, I didn't get a picture quick enough and it fell. I read it is pretty normal for them to fall after 5-10 minutes but I didn't read that until after it fell. I didn't think I had a short amount of time to take a picture. Oh well! :) It was relatively easy to make and super yummy!

    Chocolate Souffle
    Recipe from Food Network

    7 ounces finely chopped bittersweet or semisweet chocolate
    4 tablespoons unsalted butter, plus for preparing the molds
    1 1/2 teaspoons pure vanilla extract
    3 large egg yolks
    3 tablespoons warm water
    1/2 cup sugar, plus 2 tablespoons
    8 large egg whites, room temperature
    1/2 teaspoon fresh lemon juice
    Confectioners' sugar for garnish

    Directions

    Brush 6 (6-ounce) ramekins with soft butter, then coat with sugar. Put the prepared ramekins in the freezer. (This can be done a day ahead.)

    Set an oven rack in lower third of the oven and preheat to 400 degrees F.

    Put the chocolate and butter in a medium heatproof bowl. Bring a saucepan filled with an inch or so
    of water to a very slow simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. Remove from heat and stir in vanilla extract. Set aside.

    Combine the egg yolks and warm water in the bowl of a standing mixer or large bowl and beat until frothy. Gradually add 2 tablespoons sugar, and continue beating until ribbons form, about 5 minutes. Very lightly fold the yolks into the chocolate mixture. (Rinse the bowl well, if using for beating the egg whites.)

    Remove prepared ramekins from freezer. Put the egg whites in the bowl of a standing mixer, or large non-reactive bowl, add the lemon juice. Beat on medium until frothy; then gradually add the remaining 1/2 cup of sugar and increase speed to high. Beat until the whites hold a stiff but not dry peak.

    Working quickly, fold about a third of the egg whites into the chocolate to lighten; then fold in remaining whites until blended. Gently ladle or spoon the souffle mixture into the ramekins, and place on a baking sheet. (Level off the surface with a straight edge, scraping any excess mixture back into the bowl.)

    Immediately bake until the souffle rises about 1 1/2 inches from the ramekins, and the tops are touched with brown, about 18 to 20 minutes. Remove from oven, dust with confectioners' sugar and serve immediately.

    30 by 30: Salt Water Taffy

    Taffy is relatively easy to make but it is a process. After the ingredients are boiled until they reach about 250 degrees the taffy then has to be streched by hand to incorporate air. It took about 10 minutes and is quite the arm workout but it was fun!

    Salt Water Taffy
    Recipe from Vanilla & Lace

    Salt water taffy
    2 cups sugar
    2 T. Cornstarch
    1 cup light corn syrup
    3/4 cup water
    2 T. margarine/butter
    1 tsp. salt
    1/4 tsp. Flavoring oil
    (I didn't have flavoring oil so I used a tablespoon or more of Mint extract)


    Prepare a heat safe dish by lightly buttering it. If you are making more than one flavor, prep said amount of dishes. Also lightly butter a spatula for each flavor. And have each flavor and food color ready.

    In a saucepan, sift together sugar and cornstarch. Stir in corn syrup, water, salt and margarine. Place over medium heat and stir until sugar dissolves. Cover pan and bring to a boil for 2 or 3 minutes. Uncover, place thermometer in pan and cook to 256 - 266 degrees F. The lower temperature will result in a chewier taffy, the higher a more brittle texture. Remove from heat and add food color and flavoring. Stir gently, pour into prepared dish/pan.

    When cool enough to handle, grease hands and pull the warm candy with fingertips, pulling out to about 12 inches at first. Quickly turn candy back from fingertips of one hand to the other hand, then catch center and pull again. This will incorporate air into the candy. Continue pulling until taffy is light in color and has a satiny gloss, about twenty minutes. Pull into a long rope, cut with greased scissors and wrap in waxed paper squares, twisting ends.

    30 by 30: Funnel Cake


    I was looking through my 30 by 30 list this afternoon to see if there was anything I could make quickly with minimal ingredients. Funnel Cake was the only one left on there that could be done quickly so funnel cake it was! It was so super easy and practically identical to the carnival favorite! I looked through a bunch of different recipes, got an idea for ingredients, and created my own recipe. We loved the way it turned out!

    Funnel Cake
    Makes 4 large cakes

    1 1/2 cups flour
    1/2 tsp baking powder
    1/2 tsp salt
    2 TBSP sugar
    1 egg
    3/4 cup milk
    1/2 tsp vanilla extract
    1/2 tsp almond extract

    Vegetable oil, for frying
    Powdered sugar, for dusting

    Heat an inch of oil in large skillet.

    Mix dry ingredients in bowl; set aside. Mix wet ingredients and whisk into dry until well blended.

    Pour batter into pastry bag or ziploc bag; cut off corner.

    Squeeze batter into oil and cook until golden brown. Flip and cook other side.

    Drain on paper towels. Dust with powdered sugar before serving.

    30 by 30: Grilling (Balsamic-Garlic Pork Tenderloin)


    When I made my 30 by 30 list my husband had some ideas of what to put on it. This is one of his additions. My husband is a grill master and makes the most amazing food! I take care of the inside food and he takes care of the outside food. He loves grilling and wanted to share his knowledge with me.

    The funny thing is with all I have accomplished in the kitchen I have NEVER cooked on a grill before. Not even hot dogs. It was definitely time to learn!


    I started the fire, prepped the coals, and cooked the food. I made a pork tenderloin, baked potatoes, and campfire cones (chocolate chips, marshmallows, and graham cracker crumbs inside an ice cream cone). Everything turned out really good!


    The pork tenderloin was AMAZING! Seriously one of the best tenderloins I have ever had. The balsamic and garlic was perfect. I was quite proud that I made such a wonderful meal outside and was even prouder that I was able to impress my grill master hubby!

    Make this tenderloin... you won't be disappointed!





    Balsamic-Garlic Crusted Pork Tenderloin

    4-5 garlic cloves, finely minced or crushed
    2 tablespoons balsamic vinegar
    2 1/2 teaspoons coarse salt
    1/2 teaspoon freshly ground pepper
    2 tablespoons olive oil
    2 pork tenderloins (about 1¼ pounds each)
    2 tablespoons canola oil (if preparing in oven)
    Stir together garlic, balsamic vinegar, salt, pepper, and olive oil in a small bowl. Rub the paste all over pork. If you like or have the time, marinate overnight. If not, no worries, it will still be great!

    Grill preparation:

    Sear the tenderloins on all sides, then grill for about 20-30 minutes, rotating every 10 minutes, until the internal temperature is 160 degrees. Try to let it rest before slicing.

    Oven preparation:

    Preheat oven to 400 degrees.

    Heat canola oil in a large, heavy saute pan over medium-high heat. Working in batches if necessary, add pork, and brown all over, about 4 minutes.

    Transfer pan to oven. Roast pork, turning occasionally, until the internal temperature is 160 degrees, about 20 minutes. Transfer pork to a cutting board, and try to let it rest 10 minutes before slicing.

    A Trio of Truffles - Cake Batter, Oreo, & Sugar Cookie


    Sometimes (okay, a lot of the time!) it is hard for me to decide what type of dessert to make. This probably stems from the fact that I have hundreds of desserts recipes torn out from magazines, bookmarked in cookbooks, and pinned on Pinterest! This is why you see 3 truffles pictured instead of just one... I just couldn't decide!

    The first is a cake batter truffle. Not a cake ball where you bake the cake and mix it with frosting but cake mix mixed with butter, vanilla, and milk. So delicious! LOVE LOVE LOVE this truffle!

    The second truffle is an Oreo truffle. I've been making these for years and they are EVERYWHERE! I'm not sure there is anyone who hasn't had one of these before. Let's be honest... you can't go wrong with Oreos and cream cheese!

    The third truffle is a lemon-lime sugar cookie truffle. Lemon and lime zest are mixed in with sugar cookie dough, baked, and then crumbled and mixed with cream cheese. So citrus-y and delicious!

    Make any one of these and you won't be disappointed... make all 3 and have a party! :) Enjoy!

    Cake Batter Truffles

    2 1/2 cups yellow cake mix
    1 stick butter
    1 tsp vanilla
    1/4 cup milk

    White Chocolate or Almond Bark, for dipping

    Mix all ingredients until well blended. Roll into balls. Dip into white chocolate or almond bark. Decorate with sprinkles.

    Oreo Truffles

    1 package Oreos
    1 block (8oz) cream cheese

    White Chocolate or Almond Bark, for dipping

    Mix oreos and cream cheese until smooth. Roll into balls. Dip into white chocolate or almond bark. Drizzle with milk chocolate, if desired.

    Lemon Lime Sugar Cookie Truffles
    Recipe adapted from Sing For Your Supper

    1 batch of sugar cookie dough (homemade or box mix)
    zest 1 large lemon and 1 large lime
    4 oz cream cheese

    White Chocolate or Almond Bark, for dipping

    Mix cookie dough with zests. Bake cookie dough in square pan; cool & crumble.

    Add in the cream cheese and mix until the cookie crumbs and cream cheese are completely mixed together. Roll into 1-1 1/2 inch balls and refrigerate for at least 1 hour.
    Dip into white chocolate or almond bark.

    World Nutella Day - Chocolate Nutella Pancakes



    Every Sunday is pancake morning at our house. A little over a week ago my friend, Rebecca, posted a recipe for Chocolate Nutella Pancakes and I immediately bookmarked the recipe. I set it aside to make this morning without even knowing that today was World Nutella Day. While I was checking Google Reader this morning I saw a few Nutella posts and discovered it was World Nutella Day. I thought it was perfect timing considering I was planning on making these pancakes!

    The pancakes were AMAZING! I mean, let's be honest... can you really go wrong with a pancake filled with Nutella and topped with strawberries and whipped cream? No, you can't! This isn't an everyday breakfast but it's fun to indulge sometimes!

    Chocolate Nutella Pancakes
    Recipe from Delectable Delights with Rebecca

    2 1/2 cups flour
    2 tsp. baking powder
    1/3 cup cocoa powder
    1/2 tsp salt
    2 cups milk
    2 eggs
    3 1/2 TBSP melted butter
    1 tsp vanilla
    1/3 cup sugar
    nutella

    Whisk together flour, baking powder, salt and cocoa powder in a small bowl. Whisk together sugar, melted butter, eggs, vanilla and milk. Add dry to wet and whisk until combined. Preheat griddle, and ladle pancake onto hot griddle. Take a spoonful of nutella and place it in the center. Cover it with a little more batter. When pancake bubbles, flip and cook until cooked on the other side is done.  Serve with whipped cream and strawberries.

    Pumpkin Baked With Apples & Cranberries

    This was such a quick dessert to throw together. You just cut up the apples, mix with fresh cranberries, brown sugar, and cinnamon, throw it all in a pumpkin and bake. It doesn't get much easier than that! I love fresh baked pumpkin and the addition of sweet brown sugar and tart cranberries was amazing! I served it with a scoop of vanilla ice cream and it was delicious! It doesn't get much more Fall than this!

    Pumpkin Baked with Apples & Cranberries
    Recipe from Eat at Home


  • 1 pie pumpkin
  • 2 small apples, peeled and diced
  • 1/4 cup dried cranberries or 1 cup whole, fresh cranberries
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1 Tbs. butter


  • Cut the top off the pumpkin. Once the top is off, scrape out the seeds and stringy stuff.

    Stir the apples, cranberries, brown sugar and cinnamon together. Fill the pumpkin with this delicious-smelling mixture. Dot with butter.

    Bake on a cookie sheet at 350 degrees for an hour to 1 1/2 hours, until the pumpkin inside is tender when you poke it with a fork.

    TWD: Flip-Over Plum Cake


    Holy wow is this DELICIOUS!!!!!! I made it right after the September recipes were posted and my family gobbled it right up. The plums are tossed with sugar, ginger, cinnamon, and coriander. The plums are placed on top of a delicious batter and then the batter bakes up around them. And the way it smells while cooking.... HEAVENLY!

    Rice Krispie Trio


    I had a few Rice Krispie Treat recipes bookmarked so I decided it would be fun to cut each recipe in half and make all three at once. Rice Krispies are one of those treats that you can do just about anything with. I made Nutella Krispies, Peanut Butter Cup Krispies, and Pumpkin Pie Spice Krispies. There wasn't a bad one in the bunch! YUM!

    Nutella Krispies
    Recipe from Sticky, Gooey, Creamy, Chewy

    4 tablespoons (1/2 stick) butter
    1 package (10 oz.) regular marshmallows or 4 cups miniature marshmallows
    1 cup Nutella
    6 cups Rice Krispies cereal


    Melt butter in a large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat and stir in Nutella until melted.

    Add cereal. Stir with a wooden spoon or spatula until well coated. It helps to spray a little nonstick cooking spray on the spoon to keep it from sticking.

    Using a sheet of wax paper, evenly press mixture into a 13 x 9-inch pan coated with nonstick cooking spray. Cool and cut into 2-inch squares.


    Peanut Butter Cup Krispies
    Recipe from Cookies and Cups

    8 cups puffed rice cereal (Rice Krispies)
    1 (10.5 oz) bag mini marshmallows
    1/4 cup butter
    1/4 cup creamy peanut butter
    21 peanut butter cups unwrapped
    1 cup peanut butter chips (melted)

    Line a 9×9 pan with foil, and spray lightly with cooking spray.

    Place your unwrapped peanut butter cups face down in your prepared pan. (You might need to cut some in half to make them fit nicely.)

    Over low heat melt your butter. Add your marshmallows to the melted butter and stir until marshmallows are melted.

    Remove from heat and stir in your peanut butter. When the peanut butter is incorporated stir in your krispies.

    When combined dump the krispie mixture on top of the peanut butter cups and press evenly in to pan. Let sit for at least 15 minutes to cool and then flip the pan upside down releasing the krispie treats.

    Peel foil back off krispies. Drizzle your melted peanut butter chips on top of the krispie treats and let set before cutting into squares.


    Pumpkin Spice Krispies
    Recipe from Cookies and Cups

    1/4 cup salted butter
    1 (10.5) oz bag mini marshmallows
    6 cups Rice Krispie cereal
    1 teaspoon pumpkin pie spice

    Spray 9x9 pan with non-stick spray.  Over med-low heat melt your butter. Once your butter is melted, continue to cook until butter starts to brown.
    It will turn a golden brown color and develop a nutty aroma. Be careful not to burn. Once the butter begins to brown it can burn quickly. Stir up any brown bits. Add the marshmallows and pumpkin pie spice. Stir until marshmallows are melted. Remove from heat and stir in rice krispies.

    When mixed spread the krispie mixture in your prepared pan. Spray a sheet of wax paper or parchment with non-stick spray and gently press the krispies down evenly. Let cool for 30 minutes and then cut into squares.

    Banana "Ice Cream"

    So this isn't really a recipe and isn't even ice cream. But, it is a great way to use up bananas without having to turn on your oven.
    I had 4 bananas staring at me in the fruit basket that I needed to use soon. As much as I love banana bread, I just didn't feel like turning on the oven. So I just peeled the bananas, put them in a Ziploc bag, and threw them in the freezer until I could decide what I wanted to do with them.
    Then it hit me... why not just blend up the frozen bananas? I do it all the time for smoothies and I figured it would be thick enough and creamy enough to be an ice cream-like dessert. And you know what? It totally was! Creamy, cold, and delicious! You could even mix in chocolate chips, nuts, fruit, whatever makes you happy!
    I enjoyed it, the kids enjoyed it, and I hope you enjoy it too!

    Krispy Kreme Bread Pudding

    A couple of weeks ago my husband and I stayed at the Henderson Park Inn in Destin, Florida for our 10 year anniversary. While there we had an amazing dinner and an even better dessert. The dessert was a bread pudding made with Krispy Kreme donuts. It had a subtle apple flavor and a delicious caramel sauce.

    When we got home I knew I had to try and recreate it. This is what I came up with and it was SO good! Just a little note on preference... I am not a huge fan of bread pudding and prefer it to be a little crispier. My husband likes it to be softer. So, if you are like me, drizzle the sauce on top once it is served on your plate. If you are like my husband, pour the sauce directly on top of the bread pudding after removing it from the oven and let it soak in before serving. Either way, make sure you top it with whipped cream or vanilla ice cream.

    Krispy Kreme Bread Pudding

    1/2 cup sweetened condensed milk
    1/2 cup milk
    1 egg
    1/4 tsp salt
    1 tsp vanilla
    1 tsp cinnamon
    8 Krispy Kreme donuts, cut into sixths

    Sauce:
    4 TBSP butter
    1/3 cup brown sugar
    1/4 cup heavy cream
    1/4 cup corn syrup
    1/4 cup apple juice

    Mix sweetened condensed milk through cinnamon. Place donuts in large bowl and mix in wet ingredeients. Let sit for 15 minutes so the liquid can be absorbed.

    Grease a 9" pie plate and fill with donuts. Bake at 350 for 30 minutes.

    For sauce, melt butter and brown sugar together. While stirring constantly, add cream, corn syrup, and apple juice. Boil until slightly thickened. Drizzle or pour over bread pudding.

    Banana Roll with Cinnamon Cream Cheese Filling

    I love making rolls like this. Okay, to be honest, I've only ever made Pumpkin Roll. I've never used another flavor but I make pumpkin roll often enough that it seems like I make cake rolls all the time.

    When I saw this recipe over at Ingrid's blog, 3 B's, I immediately bookmarked it. The idea of using banana instead of pumpkin and filling it with a cinnamon cream cheese appealed to me. Plus, I had a couple of bananas that were begging to be used before it was too late! :)

    Oh my goodness... this was SO good! I will be adding it to my permanent file and will be making it again.

    Banana Roll

    Cake:
    Powdered sugar
    3/4 C. all-purpose flour
    1/2 t. baking powder
    1/2 t. baking soda
    1/4 t. salt
    3 eggs
    1 C sugar
    2/3 C. mashed banana (2 medium bananas)

    Filling:
    1 pkg. (8 oz.) cream cheese, softened
    1 C. powdered sugar, sifted
    6 T. butter, softened
    1 t. vanilla extract
    1/4 C. powdered sugar for sprinkling on top (optional)

    1. Preheat oven to 375°F. Grease 15×10 inch jelly-roll pan (also known as half sheet pan); line with parchment or waxed paper. Grease and flour paper; set aside. Spread out a clean, thin dish towel on the counter (make sure the towel is larger than your jelly roll pan); sprinkle liberally with powdered sugar (this can be done using a mesh strainer).

    2. In a small bowl, whisk together flour, baking powder, baking soda.

    3. In a large bowl combine eggs and sugar; beat until thickened. Add banana; beat until well mixed.

    4. Stir in flour mixture into egg mixture. Spread batter evenly into prepared pan, easing it carefully to the corners with a spatula.

    5. Bake in preheated 375 degree oven for 13 to 15 minutes or until center springs back when lightly touched.

    6. Immediately loosen cake from edges of pan; invert cake onto the prepared towel. Remove pan; carefully peel off paper. Roll up cake in towel while hot, starting with 10-inch side. Cool completely on wire rack (will take at least an hour).

    7. When the cake is almost completely cooled, make the filling: beat cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. (Add some cinnamon to taste to kick it up!)

    8. When cake has cooled completely, unroll and spread with filling (or your favorite cream cheese frosting) then re-roll cake. Wrap rolled cake in plastic wrap then refrigerate at least one hour (overnight is best).

    9. When ready to serve, unwrap cake and place on a platter. Sprinkle with powdered sugar if desired (sift the sugar through a small mesh strainer for a nice presentation). Cut into slices.
