Go ahead.... I'll give you a minute to pick your jaw up off the ground. You probably thought that I had given up on my CIA project since it has been about 3 months since I have posted something. I really haven't forgotten, but out of all the things I do for this blog, CIA Homeschool kinda gets pushed to the back burner since there are no posting dates/rules/minimum posting requirements. I am slowly hacking away at the list and hope to not have 3 more months pass before I post again!
This bread is a great one to come back with. This is one of the best homemade wheat breads I have ever had. It was so soft and so delicious. The loaf was gone pretty quickly (not sure it even lasted 2 hours!) and I will definately be making it again!

CIA Homeschool: Lemon Buttermilk Cake
It's been awhile since I have posted anything from my CIA book. I made this cake about a month ago and I don't quite know why I haven't posted it yet!
The cake is a great base cake recipe. The buttermilk and lemon zest give it a nice tang. Next time I make it, I will up the lemon a bit because I prefer for my lemon desserts to be really lemony! I dressed up the cake with sliced strawberries and a simple powdered sugar/lemon juice glaze.As I have said before, I won't be posting the CIA recipes here because I am making so many out of the book. However, there are a ton of lemon buttermilk cake recipes online, like THIS ONE from RecipeZaar that is quite similar and has good reviews.

CIA Homeschool: Carrot Cake
Wow.... I have taken a REALLY long time getting this posted. If you couldn't tell by the colorful plate, I made this cake for dessert on Easter. It only took me over a month to share it. :)
There are a few items on my list for my CIA challenge that I have made before or that I don't foresee being much of a challenge. (Some of the cakes and cookies, for example.) However, I still wanted to give them a go because you never know when you might find a new favorite.
This cake is a perfect example of something I have made before and yet something that I am so excited to have tried. We really, really enjoyed this cake! It was fantastic by itself and, of course the cream cheese frosting just made it all the better.
It is a very basic carrot cake recipe with nothing fancier than a bit of cinnamon. Maybe that is what I liked so much about it... it was a basic cake that let the flavor of the carrot shine through.
Even though there are at least two other carrot cake recipes I want to still try (Bill's Big Carrot Cake from TWD and one made with pineapple), this one is pretty darn good and I will definately make it again!

CIA Homeschool: 6 Braid Challah
Challah is a traditional Jewish braided bread that is typically eaten on the Sabbath. I love the flavor of this bread and I absolutely love the way the braided challah looks. It is just beautiful.
I have tried my hand at a 3 braid challah before and challenged myself to the 6 braid challah for the CIA Homeschool. I have to be honest with you... I needed to watch a video on YouTube to figure it out. There was a diagram in the CIA book, but I couldn't figure it out for the life of me. I must have restarted my braid 4 or 5 times before Nathan walked in with the video and saved me. (What a sweet husband I have!)
Needless to say, my challah isn't the prettiest I have seen (it's a little crooked!), but I accomplished it and now that I know how to do a 6 braid, I know prettier challahs are in my future!

CIA Homeschool: Bagels
At least 4 or 5 years ago, Nathan printed out a bagel recipe for me and said I should try my hand at making bagels. For 4 or 5 years, the recipe went untouched. It's not that they were daunting... I actually like working with yeast. I can't quite pinpoint why I never made them, but I am sure regretting waiting so long now!
While going through my CIA book and picking out the recipes that I would be making for this challenge, I knew bagels would be among them. It was really about time that I made them!
Believe it or not, the toughest part of making the bagel is shaping them and even that isn't hard. I think the difficult part is gauging what size hole to put in the middle of the bagel. As you can see from my bagels, the hole isn't there too much.
The bagel starts with only 5 ingredients; flour, yeast, salt, water, and malt syrup. After a good kneading by my stand mixer, the dough needed to rest for 10 minutes before shaping. After the shaping, the bagels are then refrigerated for 8 hours (or overnight). This overnight refrigeration allows for you to have fresh bagels first thing in the morning (not to mention the real reason, which is to develop the flavor further and allow for the gluten to rest).
After resting, the bagels have a quick dip in boiling malt syrup/water and are then baked for 10-15 minutes.

CIA Homeschool: Coffee Cake (Twisted)
One of my favorite things about living in Germany was the amount of bakeries. I didn't go every day or even every week, but when I did go, it was always a wonderful thing. The pastries and breads were always delicious. There was one particular bread that was so delicious that an entire loaf could easily be eaten in a matter of hours. And, no, I am not talking about it being eaten by multiple people.... :)
Usually I would always get a loaf of that bread, but I liked to mix it up with a delicious almond cake. This cake was amazing and oh how I loved it. It was a sad day when I purchased my last one. Let me tell you... that almond cake is on my top 5 list of foods to get right away next time I am in Germany (and there WILL be a next time!).
With all of that said, you are probably wondering what that has to do with this coffee cake. Well, this coffee cake tasted almost EXACTLY like the almond pastry I love so much! JACKPOT!
By the looks of the pictures, it may seem like this is a difficult recipe. It actually was quite simple. It is a basic yeast dough filled with a frangipane (almond paste, sugar, eggs) filling. The dough is rolled out into a rectangle, the frangipane is spread on top, and then rolled up. The roll is then cut in half lengthwise and twisted together.
After baking, the coffee cake is brushed with an apricot glaze. Oh... my... yum! If you couldn't tell, I LOVED this cake!
Ah.... CIA homeschool is paying off! :)

CIA Homeschool AND Foreign Food Focus: Black Forest Cake
This is a combination post because, well, Black Forest Cake is from Germany (which falls into my FFF for the month) and the recipe came from my CIA book. Double up when you can, right?
The Black Forest Cake, or Schwarzwalder Kirsch Torte, is a chocolate cake brushed with Kirsch, layered and frosted with whipped cream, and filled with cherries.
I remember my first trip to the Black Forest and ordering this cake. I didn't like it. The liquor flavor was so strong that it overpowered the cake for me. This was years ago, though, and way before I started being daring with my food. I really wish I still lived in Germany so I could drive down again and order another slice. Maybe this time would be different.
Since I don't drink, I decided to substitute the liquor in this cake. I used a simple syrup flavored with cherry juice to brush the layers and I thought it turned out wonderful.
The CIA cake is a little different than other Black Forest Cakes because while it is frosted with whipped cream, the layers have whipped ganache with the cherries. YUM!
I made this cake for a work function for Nathan, so that is why you can 2 liters of soda in the picture. I am just thankful Nathan got the picture for me!
As usual, I am not posting the recipe from the CIA book here, but there are a ton of black forest cake recipes online and I am hoping you will try this cake!

CIA Homeschool: Bran Muffins
It's time for another CIA post. I am trying to knock out a lot of the easier recipes on the list just to get the list a little smaller.
I have mentioned before that Anya loves bran muffins. The commissary in Baumholder had the BEST bran muffins and every time we would go, I would always pick up a few for Anya. She would inhale those muffins. You can go ahead and add bran muffins to the list of things I miss about Germany. :)
I have only tried one other bran muffin besides this one and while it was good, it wasn't like the one from the commissary that I was trying to recreate. I was hoping maybe the CIA muffin would come close.
Unfortunately, it did not. It was a good bran muffin, but not what I was looking for. It tasted very healthy and full of fiber. While that isn't a bad thing (believe it or not, I LIKE healthy food!), it just wasn't moist enough.
Oh well... the bran muffin search continues as does my CIA homeschool. 2 recipes down, about a million to go! :)

CIA Homeschool: Soft Dinner Rolls
It is time to FINALLY get started on this whole CIA homeschooling. Just in case you didn't see my announcement on the first about this, I am going to be working my way through The Culinary Institute of America's "Baking and Pastry: Mastering the Art and Craft" textbook/cookbook. I would love to go to culinary school one day, but right now I want to be home with my kids. I figured this would be a way for me to work on my craft while being home.
A few notes about this project: I won't be working in order, I won't be making every recipe (the book is 833 pages long!), and I won't be posting the recipes. At the end of this post will be a list of the recipes I have chosen to make from the book. There are quite a few and it will definately be challenging to get them all made but I am ready for it! I am also open to requests, so if there is anything on the list that catches your fancy, let me know and I will try to work it into my menu!
One of the most difficult parts of this challenge is going to be scaling all the recipes. Since this is for the Culinary Institute, every recipe feeds an army. Literally. We are talking 12 dozen cookies, 8 pounds of bread dough, and wedding cakes. It looks like math class is finally going to do something for me. :)
I started with one of the easier recipes and made soft dinner rolls. I chose to make two different shapes; Parker House and knot rolls. The dough was easy to work with and the rolls were quite simple to shape. In the future, I think I would make the knot rolls over the Parker House rolls because they are prettier. Ahhhh... looks. It's sad that now rolls are judged by that, too.
One bit of information on the Parker House rolls. They were first created at the Parker House hotel in Boston. When I was explaining this to Anya, she took the information in and then asked where knot rolls were created. I told her I didn't know and she sat quietly for a minute. Then she said matter-of-factly, "Mom, I am pretty sure knot rolls were made in Michigan.". There you go.....
