General Tso's Chicken

I love this dinner. It is so delicious and it is quick and healthy, too! Normally, General Tso's is breaded and deep fried. Delicious, yes. Good for you, not so much. Don't get me wrong... I enjoy fried food, too, and I have a sweet and sour pork recipe that is fried and so yummy. (I will make it and post... promise!)

Back to the recipe at hand... I promise you won't miss the breading on this. Try it... you'll be pleasantly surprised!

General Tso's Chicken

3/4 cup chicken broth
2 TBSP cornstarch
2 TBSP sugar
2 TBSP soy sauce
1 TBSP white wine vinegar
1/2 tsp fresh grated ginger
2 tsp peanut oil
2 green onions, chopped
2 garlic cloves, minced
1/2 tsp red pepper flakes
1 lb uncooked boneless, skinless chicken breasts, cut into bite sized pieces

In a medium bowl, whisk together broth through ginger. Set aside.

Heat oil in wok. Add green onions, garlic, and pepper. Cook 2 minutes. Add chicken and cook through. Add sauce and simmer until it thickens.

Serve over rice.

I love General Tso chicken, but your right, the extra breading is a bit much!

I am going to have to try this one - thanks!

This does sound VERY good indeed! I usually pick the bread off the Generals so I know I wouldn't miss it here at all. I will be trying this for sure! YUM!!

A nice healthy version - that's for sure. I really enjoy making Chinese food at home because you can control what goes into it. And like you said, deep frying isn't all good,so if I'm going to eat it,I'd rather eat a deep fried sweet!
