It is no secret that I don't care for coffee-flavored food. Sure, I enjoy my cup of coffee in the morning, but this has become a recent development. I remember when I first got married that I couldn't stand the smell of Nathan's coffee in the morning. I think what changed my mind is the fact that I now have two children and wake up at 430 in the morning to work out before they wake up. I NEED that caffeine fix!
With that being said, I really wanted to try this bundt cake. It sounded fantastic! The dark layer calls for espresso powder and 1/4 cup of coffee. I substituted 1/4 cup water and 1 TBSP cocoa powder. Mmmmm... a walnutty vanilla & chocolate swirled cake. Delicious!
I loved this cake and will definately make it again! Plus, after making this, I have decided that I really need to buy more bundt pans. There are so many great ones out there!

ReplyDeleteI don't "do" coffee stuff either. But made this using hot water instead. It was pretty good cakes. I made minis.

Sounds like I should have tried it with the substitutes. I never would have thought to use water for the coffee though. I'll have to keep that in mind for any other mocha recipe that comes up! Great work--looks delicious!

Your cake looks wonderful. I bet it tasted great with your adaptations. I'm not a huge fan of coffee flavored sweets either but this one wasn't very strong.

ReplyDeleteI skipped the coffee too and also added water and some cocoa powder. I thought this cake was really delicious - definitely a keeper :) I'd love to get more bundt pans too but there's no where to store them!
