Cake Batter Ice Cream is one of my guilty pleasures. I absolutely love it! I know there are some people who find it a little too sweet for their tastes, but for me, I can't get enough. I'll take it plain, with sprinkles, or with gummy bears (my favorite!). Enjoy!
Cake Batter Ice Cream

1 cup whole milk, well chilled
3/4 cup granulated sugar
2 cups heavy cream, well chilled
1 teaspoon pure vanilla extract
2/3 cup cake mix
In a medium bowl, whisk the milk and granulated sugar until the sugar is dissolved.
Stir in the heavy cream and vanilla to taste.
Stir in cake mix, making sure there are no lumps. Gently heat mixture to dissolve cake mix. (Thanks for the tip, Ingrid!!!) Cool mixture and then freeze according to ice cream maker directions.

ReplyDeleteVery interesting! I have never seen a recipe with cake mix in it! I wish I had your energy girl. I also wish I could eat ice cream. I love it but it doesn't love me. I sat and felt sorry for myself last night because Grumpy was eating some and I didn't dare. :(

ReplyDeleteThis is my babygirl's fave and I mean fave! I've made a custard base version but she loves this one best. I tweaked the recipe just a tiny bit. I gently heat up the mixture to melt down the cake mix. I felt like it left a mouth film otherwise. Did that make sense?
