SMS: Coconut Custard Pie

I love coconut. I know it is one of those things that people either love or hate... there really isn't an in between for people when it comes to coconut. But for me, I love it. I will eat it pretty much any way you give it to me.

I was excited to try this Coconut Custard Pie. Yes, I made minis again, but there is just no way that we were going to eat an entire pie. The custard is a basic custard flavored with cinnamon and nutmeg. One thing to note is that the custard is made in the food processor... no stovetop necessary. :)

The coconut is actually placed on the bottom of the pie crust and the custard is poured on top. After baking, you are left with a silky, creamy custard pie. So delicious!

Thanks to Ruby of I Dream Of Baking for hosting this week. The recipe can be found at her blog.

  2. Looks great! The mini is a great idea. I need to get my hands on some mini pie tins. Thinking of making this later today in ramekins and will try a couple of flavors. I'm one of those people on the fence about coconut. I like the flavor, but don't love the texture. I will still give the coconut a try.

  3. Looks great! I made mine and never tasted it as I brought it to a friend's party and the cupcakes were eaten, but not the pie!

  5. Cristine, I'm actually one of those in between people. I love it on it's own or with other fruit but I don't like it when it's mixed with say chocolate or anything else.

    Minis rock!

  7. How neat that the custard is made in the food processor! It looks fantastic (and minis are so much easier to deal with).

  10. I love coconut too, though I used to be a hater :) Love your mini! I almost went that route too but my mom offered to take the pie to work so I made the whole recipe after all. Glad you enjoyed this one!
