It's kind of funny that after posting a carrot cake recipe on Friday that I am now posting a carrot muffin recipe today. But, what can I say? I love carrots and they are especially fantastic in baked goods!
These muffins are great and we gobbled them up! I even froze a few and they still tasted great reheated.
Another great thing about these muffins is that they are healthy. They are made with applesauce, whole wheat flour, and oatmeal and they are delicious, too!

Carrot Oatmeal Applesauce Muffins
Recipe from Sparkpeople
2 large carrots - shredded
2 cups quick oats
2 cups whole wheat flour
2 tsp cinnamon
1 tsp nutmeg
1 tsp. baking soda
1 tsp. baking powder
2 cups milk
1 cup unsweetened applesauce
3/4 cup brown sugar
3 large eggs
Preheat oven to 400.
Combine flour through cinnamon in bowl; set aside. Combine remaining ingredients in another bowl. Mix wet into dry just until combined.
Bake for 20-25 minutes or until done.

ReplyDeleteFantastic muffins! I did use Agave Nectar instead of sugar and they turned out beautiful! I also used a stone wear muffin tin so they did take a little longer, but turned out great! Passed the 4 year old and 2 1/2 year old toddler test! Thanks so much, can't wait to try some more of your yummy recipes.
