You can dress it up by making your own spaghetti sauce or you can make it easier and use storebought. I have done it both ways and either way is yummy!

4 (4 oz) chicken breast halves
1/2 cup seasoned breadcrumbs
1/4 cup grated Parmesan
1/2 tsp Italian seasoning
1/8 tsp black pepper
1/3 cup all purpose flour
2 large egg whites, lightly beaten
2 tsp olive oil
4 cups hot cooked spaghetti (about 8 oz uncooked)
3 cups marinara sauce
1 cup mozzarella
Flatten chicken to 1/4" thickness.
Combine breadcrumbs through pepper. Dredge chicken in flour, then egg whites, then breadcrumb mixture.
Heat oil in skillet. Add chicken and cook 5 minutes on each side or until cooked through.
Preheat broiler.
Place 1 cup spaghetti in each serving dish. Top with 1/2 cup sauce and then chicken. Spoon 1/4 cup sauce on top of chicken and sprinkle with 1/4 cup mozzarella.
Place in broiler until cheese is melted.

ReplyDeleteThis is the recipe I use too (surprised?!) I love the quick & easy marinara sauce from CL with this too. YUMMY! My brother and SIL loves to have me make this for them when they come home to visit :)
