Almond Lovers Chocolate Chip Cookies


Did you honestly think that after CCC week I would be done with chocolate chip cookies? There is no way. While I still hold Thomas Keller as my favorite CCC, there are just too many recipes to try. Plus, this isn't your traditional CCC, so I'm not really cheating on TK's CCC.

What makes this cookie different is the use of almond paste. Let me shout my love for almond paste real quick.... I LOVE ALMOND PASTE!!!! Okay, now that I have that out of my system I can talk about these cookies.

I saw the recipe on Jenny's blog, Picky Palate (visit her blog... you won't be disappointed!). I am not a big nut fan in my cookies but I was intrigued by the addition of the almond paste because it would give that nutty flavor without having actual nuts.

Jenny said that the almond flavor really wasn't the first thing you notice, so I doubled the almond paste to make sure that I could taste it. Man, these cookies were good! I loved the almond flavor. It was just right... not too overwhelming. Definately a delicious cookie!

And, if you are a nut-in-your-cookie kind of person, sliced almonds would put these over the top.

Almond Lovers Chocolate Chip Cookies
Recipe from Picky Palate

2 sticks softened butter
3/4 Cup granulated sugar
3/4 Cup brown sugar
3 oz Odense Pure Almond Paste (I used 6 oz for my cookies)
2 eggs
1 Tablespoon vanilla
2 1/2 Cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
12 oz bag chocolate chips

1. Preheat oven to 350 degrees F. In a stand or electric mixer, beat the butter and sugars until well combined, light and fluffy. Add the almond paste in pieces until well combined. Add in eggs and vanilla until well combined.

2. In a large bowl combine the flour, baking soda and salt. Slowly add to wet ingredients along with the chocolate chips. Mix until just combined. Scoop onto a silpat or parchment lined baking sheet with a medium cookie scoop. Bake for 10-12 minutes or until just golden crisp on the outside. Let cool on baking sheet for 5 minutes before transferring to a cooling rack.

  1. If you were, say, living in Germany, where do you think your best bet would be to buy almond paste? Do you think I could order it online? Do you think that there is a chance that a commissary would carry it? I really want to make these cookies now! I LOVE almonds!

  2. I saw these on Jenny's blog too and of course I want to make them. Almond is my favorite flavor and I love anything with almond paste in it!

  3. I love almonds so much. Almond joy is my favorite candy :) I think this recipe would be delish, and could def get some add ins! like coconut!
