I was really excited about making mango bread for TWD this week. It was a nice change of pace from dessert recipes. This quick bread is filled with fresh mango and was a breeze to whip up.
I enjoyed it, but found that had a little too many spices for my taste. It was more of a spice bread with a little mango as opposed to a spiced mango bread. Does that make sense? It does in my head! :)
I did like it, but I don't know if I will make it again. My friend, Britteny, said she really liked it and so did her daughter. Overall, I would have to say that this was a successful recipe, just not my favorite.

I didn't try mine since I gave them away for mother's day, but sure did smell like a spice cake. Nice to see what it looked like inside!

ReplyDeleteI checked out the recipe, and it IS heavy with spices. I can see how it would overpower the mango, which I think has a delicate flavor. Way too much ginger, for starters, WOW!
I'm intrigued by the idea of a mango bread, however, and am glad you tried this and shared your opinion.
This looks soooo good! I toned down the ginger and added a bit more cinnamon as I'm crazy about cinnamon. Also added some shredded coconut and chopped pecans to the mix: delicious!!

Yep, I really like it. Lexi LOVED it. She learned the word bread because of it. She would come in the kitchen and start asking for bread. As soon as she saw me pull out the mango bread she would start doing a happy dance.

ReplyDeleteThat's what I was trying to say, but couldn't find the words for it.. spice bread with a little mango. I halved all the spices to let the mango flavour come out a bit. It looks really good!

ReplyDeleteI agree that the mango flavor wasn't very strong. I substituted different spices - and it worked out really well for my tastes. Looks great!

ReplyDeleteSo funny- I have that book, I was in Tuesdays with Dorie and I dont remember seeing this one at all. It looks good. I loved spiced things. Now I have to go look in my book.
ReplyDeleteI really don't care for ginger at all and always sub something else for it in recipes. It's to bad the spices over powered the mango.
ReplyDeleteI don't know that I would like this one either. I love mango but after putting it in muffins I'm not so sure I like it in bread type recipes. It looks nice though!

ReplyDeleteYour mango bread looks yum. I did not like it the first day but on the second day, it tasted amazing. Oh, I also added more mangoes than what was suggested. :)
