Cookie Carnival: Inside Out Carrot Cake Cookies

Ah... spring is coming! Right? Well... I hope it is! This month's Cookie Carnival selection made me think of spring. Kate of The Clean Plate Club chose Inside Out Carrot Cake Cookies and I was thrilled!

I love carrot cake and was excited to put it into cookie form. Plus, you get the added bonus of sandwiching the cookies together with cream cheese frosting. Double yum!


There was a slight problem, though. My cookies spread and went completely flat. I was so bummed! But, they still tasted delicious and I didn't want them to go to waste. So, I got a flower cookie cutter and cut out the centers of the cookies. I ended up with bite sized carrot cake goodness.

I hope to try this recipe again because I really liked it. I just need to figure out what went wrong!

  1. OH YUMMY! I will have to try these. I love the cookie cutter idea - very SPRING. Well except for the extra edges - I suppose I could feed the "scraps" to the bunnies hopping around my house all day!

  5. I am totally trying this out for my pampered Chef party... YUMMMY Carrot Cake is my ultimate favorite... and in a cookie.. HEAVEN!

  10. What a creative way to remedy the situation! Mine spread, too and I don't know why. I haven't filled them yet, but I will soon. The cookies are currently in the freezer. I've made them before and they were nice and cakey. Oh, well! It's all about the taste, right?

    Yeah, I am making these, too and I hope mine turns out well b/c I also love carrot cake.

    Bring it on!

    btw, the hubs is going to Tucson to visit his mom next weekend. I won't be joining him b/c airfare to Tucson is super expensive; I don't know why. It is the same price as going to Hawaii or NYC.
