
I love baking with vegetables, especially carrots! These muffins are filled with carrots, raisins, coconut, and yummy spices. We loved them and will definitely make them again!

I love your shot of the inside of the muffins! I baked with my silicone molds and they turned out good. I over filled them so there shape is not perfect! I crumbled one up and put it in my oatmeal, oh my...like having dessert for breakfast!
