TWD: Tender Shortcakes


Mmmmm... shortcakes! You just can't go wrong with a shortcake. I mean, it's pretty obvious that I love them considering they have their own label on my blog. Okay, so there are only 4 in that category, but they are so fantastic they deserve to have their own place!

While I do have a recipe that I usually use, that doesn't stop me from trying a new one. You never know when you will find something fantastic! Dorie's shortcake doesn't fail. I mean, anything with butter has to be good, right? I loved how it was slightly sweetened but not overly so. I let the berries sit in a little sugar and very, very lightly sweetened the whipped cream. I loved how everything went so well together without being too sugary.

(On a side note, don't judge my whipped cream. :) I turned away for a second to help one of the kids and next thing I know it was overwhipped. Still delicious, but not as smooth as I like for it to be!)

Writing this post is making me want more shortcakes.... Yum, yum, yum!

Hey, Cristine! If you over whip your cream just add in a bit more cream and beat lightly. It will smooth out and come back together again. The amount you need to add just depends on how badly it was over whipped. I just play with it. :)

Your shortcake looks delicious! I struggle with getting perfectly whipped cream - I always feel like it's slightly under whipped or slightly over whipped - never quite perfection!

Seems like I'm always over whipping my cream. :o) The blueberries look great in there, too.

Love the combination of strawberries and blueberries on your shortcake - they look fabulous! It's easy to understand why you love shortcakes, they're so easy yet so delicious :)

Beautiful shortcakes. I love the colors with mixed berries. A great tip for over whipped cream, which I am an expert at making, is to just stir in a little un-whipped cream and it will smooth right out. I always hold back a few Tbsp. of cream, just in case.

I think your cream looks fine. But I love Ingrid's idea, never would have thought of that. Whenever I've overwhipped cream, I always just turn it in to homemade butter--add a little salt.
I liked these enough that I think I'll make them again today to take to a friend.

The cream looks wonderful! Don't worry - they say if it's overwhipped you can add a little more cream, but I never do - it's all good! Whipped or overwhipped. Weren't these just the best shortcakes! Yours look wonderful!

Beautiful! My cream ended up a bit stiffer than I planned, too but was still delicious. I think these deserve their own label!
