White Chocolate Cranberry Bars

I know it is a little past the point where people have cranberries coming out of their ears, but I still had some in the freezer that were thrown in after Thanksgiving. I wanted to use them up and get them out of my freezer.

Enter these DELICIOUS bars. The original recipe called for nuts but I thought a better addition would be white chocolate chips. Seriously, white chocolate and cranberries are a perfect team.

These bars were quick and easy to throw together and were incredibly tasty. Enjoy!

White Chocolate Cranberry Bars
Adapted from Recipezaar


2 eggs (beaten)
1/2 cup butter (softened)
1 1/2 cups sugar
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup chopped nuts
2 cups cranberries (fresh or frozen)

Beat together eggs, butter, sugar and vanilla. Add flour and baking powder and mix well.

Fold in white chocolate chips and cranberries. Pour into prepared 9 x 13 pan.

Bake at 350 degrees 40-45 minutes.

I agree, you can't go wrong with white chocolate and cranberries! I make a muffin with them in it (along with coconut milk!) YUMMY. I guarantee Grumpy would like this as white chocolate is his very favorite!

I was looking for frozen cranberries the other day and couldn't find them ANYWHERE...darn!!

I think white chocolate is a better choice as well for these bars. They are beautiful and delicious looking!

I'm bookmarking this! They had some scones in the cafeteria where I work that were white chocolate and cranberry and I loved the combo.
