Martha Stewart Cupcake Club: Chocolate Salted Caramel Cupcakes

I mentioned on my blogiversary that I joined another baking group and I am thrilled that today is the post date for the inaugural month of the Martha Stewart Cupcake Club. The group was started by none other than the cupcake queen herself... Betty of Eat My Cupcake.

The first recipe chosen was Chocolate Salted Caramel Cupcakes. I can't say that I was super thrilled about the choice. Something you may not know about me is that caramel is my arch nemesis in the kitchen. I LOVE caramel. Any way you make it, I want it. But, I always have a problem making it. It never quite turns out the way it is meant to. I don't know what I am doing wrong, but I seriously suck at making caramel!


This time I thought would be different. I stayed by the caramels side just waiting for it to reach the right temperature. It was getting close, so I walked away to get the cream. Man, those last 10 degrees went fast, because in the time it took me to grab the cream, the caramel was hotter than it needed to be. It still tasted wonderful and was great, but once I filled the cupcakes with it, it kind of turned into a Rolo like candy. That's not a bad thing, but I was hoping for runnier caramel.

Overall, it was a great cupcake, though. The cake itself was delicious, the frosting was yummy, and the salt added a whole different dimension. We really enjoyed these cupcakes!

The caramel did reach temp fast- it was slightly scary! Glad it turned out for you.

They look GREAT! Seriously, I hated making caramel, but Julia Child showed a secret on one of her shows: cover the pot when you put it on the stove. When it stops steaming, it's ready to take off and add cream/butter, etc. You don't have to "watch" it or use a pastry brush/water. It's foolproof - now I love making caramel (bad, bad)! These look fantastic - I'm glad you still forged ahead! Awesome job!

Looks wonderful. I had similar problems with the caramel but without the candy thermometer. Mine was super runny so probably could of used a little more time. They look great.

Great job! I so know what you are talking about with the caramel. I used a thermometer and the first time i did it, it was too cloudy. This time went better, but now I'm going to use Mike and Julia's tip. Hubby loves the stuff, so gotta do it again! Thanks for sharing!

Wow - Rolo type filling would be awesome! Those look great though, and that frosting...mmmmm.

Although I missed the first month (doh!) I am looking forward to next months' recipe.

Haha caramel is totally my nemesis too :) My caramel also turned a bit harder than I would have liked but it tasted good. Your cupcakes look terrific!

I'll bet your caramel was perfect. It looks beautiful. So glad to be a part of the fun as well! I think I'm glad they are bite sized, how about you? he he Fewer calories that way, I hope. Yours look wonderful.

PS A good friend showed me how to make caramel and it took away the daunting fear of making a mistake. I soon figured out its just sugar. :-) Great job!

Look at those chocolatey cupcakes!

As for the caramel, I had the opposite problem. They were too runny. I didn't cool them and so they soaked into the cupcakes.

I am not complaining, they tasted great!

I'm going to try Mike's tip as well; I had never heard of it before this. Usually my caramel comes out so overcooked that I need a pair of pliers to pull it off my teeth; they're like Sugar Daddy's, remember those?

The cupcakes look very very good!
