Strawberry Shortcakes

I love homemade strawberry shortcakes. They aren't difficult to throw together the shortcake right out of the oven is divine. It is such a quick and easy dessert that really impresses. Mmmmm!


Strawberry Shortcakes

4 cups strawberries
1/2 cup sugar

Shortcakes:
2 cups flour
2 TBSP sugar
1 TBSP baking powder
1 tsp salt
1/3 cup shortening
3/4 cup milk

Whipped Cream:
3/4 cup heavy cream
2 TBSP sugar

Slice strawberries and mix with 1/2 cup sugar; let stand 1 hour.

Mix flour, sugar, baking powder, and salt in medium bowl. Cut in shortening until mixture is in fine crumbs. Stir in milk just until blended. If not completely moistened, add additional milk.

Drop by rounded spoonfuls onto greased cookie sheet. Bake at 450 for 10-12 minutes or until golden brown.

Just before serving, whip cream and sugar together until stiff peaks form. Split shortcakes, top with strawberries and whipped cream.

  1. I also love strawberry shortcakes. My children love them. Often times I will make them into a trifle for them. Sometimes I cheat and use Bisquick for the dough.. SSHH.. don't tell:) Love your version!

  4. Your shortcake looks good....I've never had a "real" one. Babygirl tried to make some (on her own)using her cookbook but somewhere along the way she had a mishap and the shortcakes came out like cookies, flat crunchy cookies albeit tasty ones. Guess we should try again, strawberry season is starting up here.

  5. This so reminds me of being a little girl. There are certain things that take me back and makes me wish I could be young again...and this is one of those things. Looks awesome Cristine. When you come back to the states, you need to come cook with me!

  7. Those look great! I've never made the 'cakes' for shortcake... I usually pick up the little cakes they have in the produce department near the berries. Now I feel guilty!!

  9. I can't wait for summer and fresh strawberries! My mom and dad use to have strawberry shortcake as a dinner once in a while when the strawberries were in season.
