Greens and Beans

Hello out there in blogland!!! The kids are sleeping and Nathan made a run to the store so I thought I would pop out a quick post! We are having such a wonderful time as a family and are just soaking up every last second with Nathan. We had family pictures taken earlier in the week and while I don't have all of them in yet, our photographer posted this one on her blog and I HAD to share! Anya is such a Daddy's girl and this picture melts my heart! It was 19 degrees outside while we were shooting and boy were we FREEZING! But, our photographer (Shauna Maness) was AMAZING and it was a great session!



Here is a quick, easy, and delicious recipe that I made a few weeks back! Enjoy!




Greens & Beans
Parents Magazine Nov 2008


1 TBSP oil
1 red bell pepper, chopped
3 cloves garlic, minced
2 (15 oz) cans Great Northern beans, rinsed and drained
1 package (10 oz) frozen chopped spinach, thawed and drained
1/2 cup chicken broth
1/2 cup water
2 TBSP parmesan cheese


Heat oil in large skillet. Add red pepper and garlic; saute about 4 minutes. Add beans, spinach, broth, and water. Boil for 3-4 minutes or until most of the liquid is absorbed. Serve topped with parmesan cheese.

    And the beans/greens are great too! I often just add more broth and make a soup with that, adding pasta as well. It's always a hit!

    I KNOW how special that father daughter bond is. I'm still a Daddy's girl and proud of it! My Babygirl is a Daddy's girl in the worse way. She won't have anything to do with me when he's around and sleeps in his t-shirts! That's okay 'cause the Twins are Mommy's boys!! :-)

  6. wow, I just had to come back and look at this again. Cristine, your daughter is one beautiful little girl. That photo is so awesome and like Ingrid say's, Nathan does look like he is moved by the closeness! I have to say this is my favorite post today!!!!

    I made a different greens and beans recipe for New Year's. Those two things were made for each other!

    The beans /greens is awesome- I make this all the time...I use Kale,Escarole,Swiss Chard or Spinach- whatever I have. It is so yummy and so good for you!

  18. That is such a precious photo! I can't even tell it's cold (aside from the snow :) because of the warmth! And that meal likes it would be perfect for a freezing day, hearty and nutritious.

  20. Hey Cristine! I love that photo of Anya and Nathan. Her lashes are so dark!! Makes me realize how bad we need to get some pictures taken. Glad you guys had a great R&R! We pray for all our friends in Baumholder every night! Love ya!
